Steamed Mahi Mahi in Cabbage
Steamed Mahi in Cabbage with Hot and Sweet Dipping Sauce
with Aloha Spice - Kauai Aloha Coffee Rub

Recipe For two
Ingredients:
4 3oz pieces of skinless mahi mahi
2-3 Tbsp coconut oil for the fish and the wrapping
3 Tbsp Aloha Spice Kauai Aloha Coffee Rub & Seasoning
4 Leaves of Chinese or Napa Cabbage
Salt
Directions:
Oil the fish and season with Kauai Aloha Coffee Rub, let marinate in refrigerator for one hour
Bring a pot of water to boil, add some salt
Add cabbage leaves to boiling water; cook for 30 seconds to a minute, or until just wilted
Remove from heat; Cool quickly by plunging leaves into ice water for 1 minute, remove from ice water, pat dry
Wrap the fish in cabbage leaves and brush lightly with the coconut oil.
Steam to doneness, approx. 10 minutes
Arrange on a platter with a bowl of dipping sauce.
Hot and Sweet Dipping Sauce
Ingredients
1/2 cup water
4 Tbsp lemon juice
3 Tbsp sugar
Pinch of crushed saffron
1 tsp chili flakes
1 clove garlic, minced
2 Tbsp chopped coriander leaves
2 Tbsp chopped fresh mint
Aloha Spice Kuakea White Hawaiian Sea Salt to taste
Directions:
Combine all ingredients in saucepan
Simmer 5 minutes.
Chill to room temperature. Serve.
